The use of GIFs is one of the most commonly used techniques for this.

Given the popularity of this format, the main email marketing softwares have decided to bet on it (Twitter did so in its day) and enable their platforms to include this format when you are creating your email on them. Some of the platforms where GIFs can be included are:

Mailchimp . The email marketing software par excellence could not be left behind. This tool allows you to upload the GIF directly to the platform's file manager. It also gives you the option to include them from Giphy, which is the main tool used to create GIFs.
Mailify . This platform (which is one of the top platforms in the Spanish market) allows you to import images from its EmailBuilder, although it is a little more complicated than with Mailchimp, since the GIF must be uploaded from a URL.
Email providers . If your company doesn't use any email marketing platform, Gmail and Outlook.com (which everyone uses) can be a lifesaver, as they also allow you to include the .gif format in the text of your email (just like you would with an image in any other format).
How to create a GIF for an email
A GIF is nothing more than a series of images, so they can be easily created using Photoshop (which saves in .gif format). If you don't have a good command of this tool, you can use one of the platforms that automatically assemble them, such as Makeagif or Giphy.

On these platforms, all you have to do is upload the images you want to make up the sequence and they will automatically generate the format for you.
